Recipe Notes To pop amaranth: heat a flat-bottomed pan on medium high heat. When pan is hot (add a drizzle of water; if it sizzles, pan is hot enough), add in the amaranth seeds. Stir the amaranth with a wooden spoon to keep it from burning, moving the seeds around the bottom of the pan quickly. Seeds will begin popping, but not all seeds will pop. Continue popping and stirring occasionally for 2–3 minutes.
