Cookies will soften slightly over time, giving them a fudgier texture. To roast a sweet potato: Preheat oven to 425°F. Slice a scrubbed sweet potato lengthwise and place cut side down on a parchment lined baking sheet. Bake for 20-25 minutes or until no resistance is felt when pierced with a fork.
