Blueberry Cobbler Chia Seed Pudding


Blueberry Cobbler Chia Seed Pudding • ½ cup of Bob’s Red Mill chia seeds • 2 cups of coconut milk • 1 teaspoon of vanilla • 6 tablespoons of honey • 3 cups of fresh blueberries • juice of ½ lemon • ½ teaspoon of cinnamon • ½ cup of frozen blueberries • Optional Toppings: Bob’s Red Mill Granola and Hemp Hearts Serves 2 to 4 Procedures: 1. In a medium size bowl whisk together the chia seeds, coconut milk, vanilla and 2 tablespoons of honey until combined. Chill in the refrigerator for 4-6 hours. 2. In a small sauce pot mix together 4 tablespoons of honey, fresh blueberries, lemon juice and cinnamon and cook over low heat for 10 to 12 minutes or until it becomes very thick. Chill immediately. 3. To Serve: Layer the chilled chia seed pudding along with the chilled blueberry compote and garnish with froze blueberries, granola and hemp hearts.
